Only a few weeks ago, eleven stars were given to
ten Copenhagen restaurants by the French Michelin Guide. That is more stars than any other city in Scandinavia! Noma leads the pack as Copenhagen’s only two-star Michelin restaurant. An impressive 12 Michelin “Bib-Gourmands” were also given to a fine range of “good value-for-money” restaurants in the
Copenhagen area. Furthermore, head chef of organic restaurant Geranium II Rasmus Kofoed, received international recognition in January, when he was named “the World's Best Chef” at the 2011 Bocuse d'Or, considered the world championship for professional chefs.
“That Danish gastronomy is world-class is confirmed by the fact that Denmark this year has the world’s best restaurant AND the world’s best chef. noma has had an immeasurable impact, not just on Danish gastronomy, but indeed for Denmark as a travel destination. With their completely unique utilisation of Nordic ingredients they have roused curiosity with foodies all over the world, who want to know more about what the new Nordic Cuisine has to offer. Congratulations to noma on this extraordinary achievement” says Henrik Kahn, Director of VisitDenmark UK.
On the whole,
Danish cuisine has changed radically over the past decade, blending foreign influences with the richness of Denmark's own natural produce; its excellent dairy produce, its high quality, organic fruit and vegetables and, of course, the raw ingredients from its surrounding waters. The result? A “new Nordic Cuisine” that in recent years has become recognised and received rave reviews by top food writers, gourmets and gourmands from around the world.
